OSWALDO OLIVA
Oswaldo Oliva is the creative talent behind Aleli Rooftop.
He dedicated a decade of his life outside of Mexico, honing his skills by cooking in some of the world’s finest restaurants, including El Celler de Can Roca and Mugaritz, where he worked under the guidance of Chef Andoni Luis Aduriz.
Inspired by the outstanding work of renowned mexican professionals like Chef Enrique Olvera, whom he greatly admires, Oliva returned to Mexico to embark on the projects of his lifetime, Lorea and Aleli Rooftop.
